Potato omlette

This is an interesting vegetarian meal that can be made without utensils.

You will need

  • Two eggs
  • One medium sized potato
  • Large cabbage leaves
  • Salt& pepper to taste
  • Aluminium foil

Method

  • Grate the potato and mix thoroughly with the two eggs,
  • Form a foil bowl with a double thickness of foil,
  • Line the foil bowl with cabbage leaves - this is to prevent the egg from sticking to the foil.
  • Scoop the egg/potato mixture on to the cabbage leaves,
  • Close up the foil bowl with foil
  • Place on hot embers for about 10 minutes.


Variations

  • Add 25g of grated cheese or finely chopped onion to the mix to add flavour.
