Potato omlette

This is an interesting vegetarian meal that can be made without utensils.
You will need
- Two eggs
- One medium sized potato
- Large cabbage leaves
- Salt& pepper to taste
- Aluminium foil
Method
- Grate the potato and mix thoroughly with the two eggs,
- Form a foil bowl with a double thickness of foil,
- Line the foil bowl with cabbage leaves - this is to prevent the egg from sticking to the foil.
- Scoop the egg/potato mixture on to the cabbage leaves,
- Close up the foil bowl with foil
- Place on hot embers for about 10 minutes.
Variations
- Add 25g of grated cheese or finely chopped onion to the mix to add flavour.
