Ingredients
- 250g cake flour
- 15ml baking powder
- 60g margarine
- 30g sugar
- 1 pinch of salt
- 200ml milk
Method
- Mix the salt, flour and sugar together.
- Rub the margarine into the flour until the mixture resembles fine breadcrumbs.
- Add the milk, a little at a time, while stirring the mixture in a figure of eight motion with the edge of a knife or plastic spatula until a thick dough is formed. (The secret is to handle the mixture as little as possible for the scones to turn out light and fluffy).
- Gently flatten the dough out to about 15 mm in height and use a cup to cut out circular portions.
- If you brush the tops or the scones with a little milk before baking they have a lovely shine to them.
- Bake on a grid, lined with foil and greased with margarine or Spray & Cook inside a Dutch oven for about 10 minutes.
